For our weekly feature, "Moveable Feast," Rachel Hutton of Minnesota Monthly joins John Birge to talk about where to go and what to eat in Minnesota.

Each year, Minnesota Monthly chooses the restaurateur who had the biggest, most impactful year. Last year it was Isaac Becker, who had just launched Burch steak, his third successful restaurant in a decade. This year, they chose the chef/owners of Travail — Mike Brown, James Winberg, and Bob Gerken — due to their meteoric rise on the culinary scene.

In 2010, they opened Travail serving a unique brand of what Minnesota Monthly writer, Quinton Skinner, calls "rock and roll fine dining." It has all the quality ingredients, precise technique, and creativity of fine dining, but in a very casual setting. As part of their 10-course meal, you might be served, for example, a foie gras lollipop encrusted with pop rocks!

After receiving raves locally and nationally, including kudos from Bon Appétit, they shut down the restaurant, raised a quarter-million dollars on Kickstarter and relaunched with a new and improved restaurant, bigger and better than ever.
