
For our weekly feature, "Moveable Feast," Rachel Hutton of Minnesota Monthly joins John Birge to talk about where to go and what to eat in Minnesota.
Three brand new restaurants rose to the top of the pack this year: Libertine, Heyday, and Brasserie Zentral.
Libertine is Parasole's new restaurant in Uptown, replacing their former Uptown Cafeteria, with a menu designed by the fine-dining chef Tim McKee of La Belle Vie. We talked about Libertine when it first opened as being a sleek and chic spot, serving steaks in more affordable cuts, plus elegant crab-avocado salads, plus fried pig ears — Rachel thinks they're delicious... seriously!
In nearby Lyn-Lake, Heyday is a terrific neighborhood spot. The chef, Jim Christiansen, actually worked with Tim McKee quite a bit so he has very refined technique and creative flavor pairings. A few of Rachel's favorites were a delicate chicken liver mousse and a fish dish — she had it with branzino — with avocado and pistachio.
In downtown Minneapolis, the owners of St. Paul's Meritage opened Brasserie Zentral, which focuses on Austro-Hungarian cuisine. The food is both Old World and elegant, from cabbage rolls to rabbit to a full menu of foie gras dishes. Zentral is actually part of a three-restaurant complex that includes a wine bar called Foreign Legion and a skyway level Cafe Zentral.
